The origin of the wood characterizes the different bouquets and tastes the cask gives to the wine. Through its pores there is a gaseous exchange that helps to the formation of the combinations between the wood tannins and the wine antocianyns, creating like that a characteristic colour, bouquet and taste to every wine.
